in a convection oven, it only takes 15 minutes to cook a cake that usually takes 30. strange, but wonderful, nonetheless. the icing is pure cream cheese, butter, powered sugar, with added walnuts and coconut. i had no idea coconut (which I love) was one of the MAIN ingredients in italian cream cake.
